HEALTHY TREKKERS ARE HAPPY TREKKER

Fuel your trek the right way with Sonia's Trekking Cookies... Oats are a source of fibre that makes us feel full plus they are a source of needed minerals including potassium, calcium, manganese, phosphorus, vitamin B1 and zinc. Bananas are also a wonderful nutrition loaded carbohydrate and a natural sweetener.

Sonia Osborne Nutrition

Ingredients:

150 g Smashed ripe banana
1⁄2 Teaspoon ground cinnamon
200 g Gluten Free rolled oats
1⁄2 Cup desiccated coconut
1⁄4 Cup pure maple syrup or raw honey
1⁄4 Cup olive oil (or soft butter)
2 Tablespoons chia seeds
1⁄2 Cup raisins and/or chopped dark chocolate (or use whatever dried fruit you like)

Method:

Preheat oven to 130 C.

Combine all the ingredients into a large bowl. Mix together well with your hands - squeezing the mixture together so that it binds well (OR combine in a food processor with the plastic blade which makes it super-easy).

Form into 12 cookies (use a tablespoon or your hands). Flatten slightly.

Bake in a moderately low oven for 30 – 35 minutes or until golden and set on the outside. Cool and enjoy.
